
Time for another one of my concoctions. Obviously I like to mess around with making foods that are in alignment with the nutrition principles I laid out (if you haven’t read it, check it out). Lately I’ve been really focusing on getting as many greens as possible. This has taken my energy levels and mental clarity to a whole new level. I am not exaggerating either. I feel like superman. Popeye was right all along about the spinach.
So for example, today I had two of these green shakes, this salad I’m showing for lunch, and I’m about to go make another salad as soon as I post this. Maybe it’s overkill, but I am loving the green stuff! Anyhow, give this salad a try. It’s super simple. Nothing revolutionary here, but I find it really delicious.
Ingredients:
- Mixed greens: for nutrition
- 1 wild salmon burger cooked on the grill: for Omega 3 and protein (get these from Costco, I highly recommended)
- A little shredded Parmesan cheese: for taste
- Balsamic dressing: for healthy fats and taste (basically balsamic vinegar, olive oil, and some seasonings)
- Roughly a half cup of black beans: for carbs needed for the gym and protein
- Sprinkled chia seeds: for omega 3s
- Salt and pepper
Nothing crazy here. I just want to provide people some ideas. Hopefully you can make stuff that’s even better.



I buy those salmon patties religiously. They’re quick and filling. I quite honestly prefer these salmon patties over fresh salmon when making my own home made salmon patties/burgers. They’re even great on a “flat out” or whole grain wrap using reduced fat/fat free cheese and veggies, popped in the oven to make a sort of pizza or quesadilla. I’ve also crumbled it on a sweet potato, which was pretty delish.

Funny that you say that. A friend actually suggested that given the Christmas Season, I should do some sort of ’12 days of Healthy Recipes/Protein Cookies,’ since she’s always running out of ideas. I’ve had to compromise quite a bit, given my oven just broke. Most my baked goods lately have been smaller batches cooked up in my toaster oven, which works given that it’s only me.
Since you’re a fellow Costco shopper, I also recommend those Isernio brand chicken sausages. I love making them in to chicken meatloaf “cupcakes,” as my job requires that I’m constantly on the go– makes it easy to pack up and go. Nutritional stats aren’t too bad:

Calories per serving: 80; Calories from fat: 25; Fat: 3g; Saturated fat: 0.5g; Cholesterol: 55mg; Sodium: 480mg; Carbohydrates: 0g; Protein: 13g.
